Aqua Vitae Pergole Torte is an amber grappa crafted by Montevertine in Tuscany from fresh Sangiovese pomace. It offers an intense aromatic profile that beautifully mirrors the complexity of the grapes. The palate is warm, smooth, and perfectly rounded, balanced by an alcohol content of 42%. The tasting experience concludes with a refined and persistent finish.

Geographical origin

Originating in Tuscany, Italy, the pomace is sourced directly from the Radda in Chianti area. Its character is defined by Sangiovese grown in the renowned Pergole Torte vineyard. This careful selection ensures the distillate remains firmly focused on its varietal identity. The specific terroir yields a soft nose and a structured palate, delivering a satisfying depth of flavour.

Production process

The fresh pomace undergoes precise steam distillation in small pot stills to capture its most delicate aromas. Following extraction, the spirit benefits from five years of ageing. This extended resting period develops its rich amber colour and significantly softens the alcohol. This slow maturation creates a harmonious structure, resulting in a wonderfully smooth profile.

Montevertine is located in the heart of the Chianti hills, in the town of Radda in Chianti at 425 meters high. The site was certainly inhabited since the 11th century. In fact, there are still traces of the original building, certainly defensive, then transformed into a lodging.
Montevertine was purchased in 1967, Sergio Manetti, then the steel industry, as a holiday home. He restored the house to make it habitable and just planted two acres of vineyard and set up a small store with the idea of producing a 'wine for his friends and customers.
The first year of production, 1971, was more discreet and Sergio Manetti decided some bottles at Vinitaly via the Chamber of Commerce of Siena. It was an immediate success and so enthusiastic about Mr. Manetti that after a few years he abandoned his core business to focus solely on wine. New vineyards were planted, new wineries, and this without any interruption, with a development company that still lasts.
The farm, after the death of Sergio Manetti in November of 2000, is now run by his son Martino Manetti collaboration with Bruno Bini, born in Montevertine and deep knowledge of the area and land. Giulio Gambelli, expert wine taster, offers his advice and assistance in the preparation of wines.
