| Wine making | Traditional method. The grapes are crushed as soon as they arrive in the vat room in pneumatic presses and then placed. Alcoholic fermentation takes place in thermoregulated stainless steel vats at 18 °C. The base wines are then blended. They then undergo a second fermentation in the bottle and a 15-month maturation ('Sur Latte') before being placed in gyro-palettes and disgorged. |
