Koval Bourbon Whiskey Single Barrel is an unfiltered American Bourbon crafted in Chicago. This single cask spirit features an organic mash bill of maize, millet, and barley malt. Maturing in heavily charred American oak yields an amber distillate with a smooth, structured profile. The nose reveals intense fruit aromas, vanilla, and warm spices. On the palate, notes of apricot, honey, and peppery caramel lead to a distinct, fresh menthol finish. With an alcohol content of 47%, it is best enjoyed neat at 18–22 °C or mixed in a Horse’s Neck cocktail.

Where it comes from

Originating from Illinois, this Bourbon is produced by Koval, the first distillery established in Chicago since Prohibition. The company adopts a rigorous Midwest approach, utilising exclusively organic cereal grains sourced from local farmers. Every stage of production is managed entirely in-house, ensuring complete traceability from harvest to the final distillate. The connection to the American landscape is reinforced through maturation in Minnesota oak casks. This regional sourcing and transparent philosophy result in a distinctive Bourbon characterised by a clear grain character and a clean, fruit-led structure.

How it is produced

Production begins with a kosher-certified mash bill of maize, uniquely supported by a high proportion of millet and barley malt. Following fermentation, the liquid is processed through custom copper pot stills, where the heart of the distillate is isolated by strictly discarding the fore and tail cuts. This pure spirit then rests for several years in heavily charred barrels, developing deep flavours of toasted oak, butter biscuits, and mango chutney. It is drawn from a single barrel in small batches without filtration, preserving its authentic complexity. The finish offers traces of tobacco, clove, and almond, reflecting a highly controlled artisanal distillation process.

Koval is a handicraft distillery built in the city of Chicago, Illinois, and is the first distillery for legal whiskey production to open in the Midwest state after the abolition of Prohibition.
Founded in 2008 by Robert and Sonat Birnacker (who decide to set aside their academic careers to retrieve the traditional distillation method of Robert's grandfather, Robert), the distillery produces an excellent selection of traditional American whiskey as well as a wide range of liqueurs, fruits and spirits.
All Koval's production line is biologically certified and kosher, and all the materials used are of local origin (including cereals and wood for casing construction). All stages of the production process of whiskey: mashing, fermentation, distillation, ripening and bottling are carried out at the distillery and are constantly monitored by a team of experts.
Aging takes place in 30 gallon barrels (113.55 liters) that depending on the distillate that will mature, are medium to strong roasting; in this way the distillate can develop both the characteristic aromas of the starting cereal and the sweet ones of the wood.
