I Palchi Foscarino Grande Cuvée by Inama is a still white wine that faithfully expresses the authentic character of Garganega. Its silky texture and vibrant savouriness offer enveloping sensations, intertwining aromas of white flowers, citron and hints of flint. This clear mineral tension makes it ideal for accompanying delicate first courses and enhancing the refinement of oysters and raw seafood.
Where it comes from
The grapes are grown on the picturesque terraces of Monte Foscarino, within the Soave Classico area. The old vines are cultivated using the Pergola Veronese method, benefiting from a carefully chosen south-west exposure. The roots delve into deep volcanic soils of basaltic lava, a geological matrix that gives the wine its unmistakable saline profile and a long, taut and very fresh progression on the palate.
How it is produced
The harvest is carried out exclusively by hand, followed by rapid cooling of the bunches to protect the integrity of the aromatic profile. The skin maceration lasts for eight hours, allowing the free-run must to gain intensity through meticulous processing. After fermentation, which takes place in oak barrels and stainless steel, the wine rests on the lees, enriched by frequent bâtonnage. At the end of maturation, the different components are blended into a harmonious blend, perfected by further ageing in the bottle.
