Harvest | By hand, at the end of August. Grapes are slightly dried on the vine followed by a careful selection of the best bunches. The grapes are brought to the winery in refrigerated trucks. |
Wine making | Once in the winery, grapes are sorted, destemmed and softly crushed. Maceration occurs in a 70-hl stainless steel vat with a skin-must contact for two to three weeks. The marc is temperature-controlled with 2 daily délestag. The marc is pressed by using a vertical hydraulic press with a stainless steel cage. |
Aging | After racking, the wine is put into 50% new and 50% second passage French oak barriques with daily bâtonnage until the first racking. After about 9 months of ageing in wood, the wine is bottled without the aid of clarifying agents and tartaric precipitation. It finally refines about 9 months before being marketed. |
