Description
What kind of oil it is
Edoardo Valentini Extra Virgin Olive Oil stands out for its clear and bold aromatic profile. Characterised by an intense green colour, typical of natural sedimentation, it reveals a fruity and herbaceous aroma of great definition on the nose. On the palate, it expresses a savoury and persistent structure. Thanks to its intensity, it is ideal for enhancing starters, first courses, pizzas and vegetarian recipes, offering its best when used raw.
Where it comes from
This oil originates from Loreto Aprutino, in the heart of Abruzzo. Production follows an artisanal approach that reflects the dedication of the Edoardo Valentini family, whose agricultural history dates back to 1650. The local soil imparts a pronounced savouriness and an authentic territorial expression, defining a distinctive flavour profile that fully enhances its place of origin.
How it is produced
Extraction is carried out directly from the olives using exclusively mechanical processes. To preserve the integrity of the raw material, the oil undergoes a phase of natural decantation, without being subjected to filtration. The choice to allow the spontaneous separation of suspended particles results in an unfiltered oil that retains its original characteristics intact. The result is a persistent and bold flavour, the fruit of a rigorous and respectful method.
History and Curiosities
With roots in Loreto Aprutino documented since 1650, the historic Edoardo Valentini estate passes down an Abruzzese agricultural heritage of rare excellence. Now led by Francesco Paolo and Gabriele Valentini, the company tends its sixty-five hectares following a rigorous artisan approach. A distinctive feature of this extra virgin olive oil lies in its bottling, which takes place during natural decantation. Proudly unfiltered, the product preserves its precious original components and the authentic soul of the land.
