Description
What kind of spirit is this?
Grappa di Barolo by Marolo is a dry Italian spirit distilled from Nebbiolo grape pomace, boasting an intense amber colour and a powerful aromatic presence balanced by a notable smoothness. Prolonged maturation in small oak and acacia casks shapes its profile, intertwining fruit notes with deep wood and spice. The bouquet reveals inviting aromas of plum and candied fruit, complemented by hazelnut and almond. On the palate, the experience offers a long finish free from cloying notes, highlighted by layers of liquorice, pepper, clove, nutmeg, anise, and tobacco.
Geographical origin
This spirit originates from Barolo in the Piedmont region, crafted exclusively from local Nebbiolo pomace. Its identity stems from the careful handling of grape skins after pressing, preserving the vibrant qualities of the variety. The firm and dry style allows primary characteristics like plum and candied fruit to shine. These elements are supported by rich dried-fruit tones of hazelnut and almond. The remarkable persistence and defined character of this grappa directly reflect the quality of the raw material sourced from the Barolo area.
How it is produced
Production begins with a precise distillation process. This is followed by an extensive maturation period in small casks crafted from oak and acacia. This ageing approach develops pronounced barrel-derived notes and a deep hue. As it rests, the spirit gains dry, spicy elements including clove, pepper, nutmeg, and anise. These spices integrate beautifully with deeper layers of liquorice, tobacco, and wood. The result is a robust spirit at 50% ABV, characterised by a rounded smoothness that ensures a flawlessly clean finish.

Marolo represents the spirit of the land, the loyalty to its most noble vineyards and the transformation into a grappa that glorifies its natural characteristics. Distillation happens in bain marie disctoninuos stills, one for white and another for red, in small batches over a long period of time so that the original flavours of the grapes can be experienced.
Marolo is based in Alba, the capital of the Langhe, one of the world’s premier winegrowing districts for its diversity of grape varietals and the quality of its wines. The Langhe hills produce some of the finest red wines, such as Barolo, Barbaresco, Barbera, Dolcetto and Brachetto, but also great whites like Roero Arneis and the aromatic Moscato d’Asti.
Marolo’s grappas are a mirror of the incredible richness and diversity of the territory and viticulture. Not a neutral, standardized, industrial product, but a spirit able to narrate the grape from which it came, to enhance the varietal’s typical aromas, and express a unique, personal character linked to its land of origin.
