Description
What kind of spirit is this
Grappa Dedicata al Padre by Marolo is a clear grappa from Roero, Piedmont, distilled from selected mixed red pomace. Aged in stainless steel tanks, this 60% ABV spirit stands as the highest-strength offering in the producer’s range. The bouquet is remarkably precise, presenting a clean and harmonious aroma. On the palate, this grappa delivers an engaging experience, revealing a full-bodied and warm character that concludes with a persistent, enveloping finish.
Origin
The character of this spirit is deeply rooted in Roero, a renowned winegrowing area within Piedmont. The base consists entirely of locally sourced, selected mixed red pomace, which imparts a firm structure and a distinct geographical identity to the final liquid. Marolo distils this authentic regional expression in Alba, ensuring the qualities of the local vineyards are directly transferred into the glass. The resulting grappa offers a decisive territorial profile characterised by striking purity.
Production
The creation of Grappa Dedicata al Padre involves the careful distillation of red grape skins to thoroughly extract their natural aromatic compounds. Following this process, the spirit undergoes a dedicated maturation period in stainless steel tanks. This specific technical approach completely avoids the influence of wood, guaranteeing the crystal-clear appearance of the liquid. Resting in steel allows the intense aromas to integrate perfectly, balancing the high alcohol content to produce a linear and focused structure that highlights the primary ingredients.
History and Heritage
Crafted by Distilleria Marolo in Alba, Grappa Dedicata al Padre serves as a tribute within the classic range. Interestingly, it is the highest-strength expression in the collection at 60% ABV. The traditional cream-coloured label features an illustration of a figure in a red coat and yellow hat engaged in production, reflecting a dedication to historic Italian distillation methods.

Marolo represents the spirit of the land, the loyalty to its most noble vineyards and the transformation into a grappa that glorifies its natural characteristics. Distillation happens in bain marie disctoninuos stills, one for white and another for red, in small batches over a long period of time so that the original flavours of the grapes can be experienced.
Marolo is based in Alba, the capital of the Langhe, one of the world’s premier winegrowing districts for its diversity of grape varietals and the quality of its wines. The Langhe hills produce some of the finest red wines, such as Barolo, Barbaresco, Barbera, Dolcetto and Brachetto, but also great whites like Roero Arneis and the aromatic Moscato d’Asti.
Marolo’s grappas are a mirror of the incredible richness and diversity of the territory and viticulture. Not a neutral, standardized, industrial product, but a spirit able to narrate the grape from which it came, to enhance the varietal’s typical aromas, and express a unique, personal character linked to its land of origin.
