Description

What kind of wine it is

Adn de Foudre Chardonnay by Christophe Mignon is a Blanc de Blancs with zero dosage, an essential expression of Chardonnay. Produced using the Traditional Method, this wine reveals a clean and delicate aromatic profile, marked by subtle woody notes. On the palate, the absence of added sugars combines with a rounded, buttery texture, with clear hints of toasted almonds. Its crisp taste makes it ideal for pairing with seafood starters and shellfish, perfectly balancing lean and fatty fish or medium-aged cheeses.

Where it comes from

The wine originates in Champagne, from the regions of Festigny and Le Breuil, highly renowned French areas. The vineyards benefit from optimal south and south-west exposure, a climatic factor that ensures regular ripening of the grapes. This geographical location allows for an ideal balance between freshness and tactile softness. The geological identity translates into a linear and defined expression, giving the glass that essential and transparent profile which reflects the unique character of its place of origin.

How it is produced

Production begins with manual harvesting of the Chardonnay to preserve the integrity of the fruit. The sparkling process follows the Traditional Method, incorporating agricultural practices based on biodynamic principles. The wine rests on the lees through a four-year maturation, developing a complex structural consistency. The use of barrels during production imparts characteristic woody nuances, while the decision not to add any sugar dosage preserves a dry character, resulting in a sip with fine texture and great precision.

From this winery
Our Champagnes are elaborated according to methods that integrate the wisdom and knowledge of our ancestors with the latest 21st century advances. Certain approaches, today called "alternative", were actually part of our ancestors ways of working. On our land, we work the soils, we dynamise our treatments, we follow the lunar calendar… Our primary quest is the balance between heaven and earth, roots and branches, mineral and fruit, fragrance and flavour… Welcome in our universe !

Even though Christophe has been working according to the biodynamic principles, he never applied for an organic or biodynamic certification.
