Description
A classic method sparkling rosé produced by Cherubini. A Rosé Nature VSQ, with no vintage indicated, made from Pinot Noir grapes. The Cherubini winery, located in Franciacorta, produces wines with a philosophy that favors minimal intervention, both in the vineyard and in the cellar. The grapes are destemmed and left to macerate for approximately six hours. The wine is then racked into concrete tanks and fermented spontaneously in the tank for approximately twenty days. After fermentation, it is racked into concrete tanks where it rests until the second fermentation. After a minimum of 48 months of aging, I disgorge the wine and use the same wine for topping up. The nose displays excellent evolutionary and tertiary notes. On the palate, freshness and balance complement the minerality very well.

These soil characteristics combined with a constant light breeze and temperature variations give the wines minerality and acidity typical of the production terroir. Conventional agricultural tools such as weed killers or pesticides are not used.
The agricultural and winemaking philosophy is aimed at intervening as little as possible both in the vineyard and in the cellar, hence the choice to produce classic methods with Zero Dosage with only refinements in cement tanks that guarantee products with the maximum expression of the territory of origin.
