Description

Still organic red wine from Burgundy, 13% ABV, produced by Chantal Lescure, 0.75 L bottle, 2021 vintage. 100% Pinot Noir. A wine made from a vineyard cultivated entirely using certified organic methods since 2006. The soil is clay-limestone, very stony. Harvested by hand. Maceration and fermentation are gentle, with natural yeasts. Aged in stainless steel tanks for 12-4 months. However, 20% to 30% of the cuvée is aged for 6-8 months on the lees, in single- or double-wine barrels.

Soil composition The soil is clay-limestone, very stony.
Yield per hectare 35-40 hl
Harvest ing is by hand. The grapes are selected, destemmed but not crushed.
Wine making We then place the grapes in vats by gravity. Maceration and fermentation are soft, with natural yeasts. The cap is punched down moderately, the tanks are closed.
