Description
Extra Brut Classic Method sparkling wine from Alta Langa DOCG, 12.5% ABV, produced by Cascina Chicco. Blend: 65% Pinot Noir, 35% Chardonnay, 2021 vintage. An Alta Langa Millesimato born from the passion of the Faccenda family, with select grapes and a long 36-month maturation on the lees at 12-13°C. Fine and persistent perlage. The nose is complex, with floral notes of white-fleshed fruit and citrus that anticipate a richly structured palate. On the palate, it is dry and supple, with a long citrus and mineral finish.

We have installed solar panels on the roof of the cellar with a total capacity of 40 kW. | Wine making | After harvesting, the grapes are immediately subjected to a soft cold pressing, followed by the first fermentation that brings out the characteristic notes of the grape varieties. Following a period of several months in stainless steel, we proceed with bottling for the second fermentation and prise de mousse at a temperature of 14 °C. |
