Description
Sebino IGT still red wine, 13.5% ABV, produced by Ca' del Bosco, a renowned Franciacorta winery. Blend: 50% Cabernet Sauvignon, 25% Cabernet Franc, 25% Merlot. 0.75L bottle, 2021 vintage. A red that embodies the excellence of the region, born from the passion of Maurizio Zanella and the expert vinification of grapes from Ca' del Bosco's finest vineyards. The nose is fruity and spicy: black cherry and raspberry jam, vanilla, and cloves. A fairly concentrated ruby red color. Its drinkability is in line with its nose: opulent, consistent, and with tannins still settling. A wine that promises a long evolution and pairs perfectly with red meats, game, and aged cheeses.

| Wine making | The 'Maurizio Zanella' is obtained by vinifying Cabernet Sauvignon, Merlot and Cabernet Franc grapes separately from the best Ca' del Bosco vineyards. The grapes, harvested by hand in small crates, are promptly graded and cooled. Expert eyes and hands select each bunch before being transported over the maceration vat. With destemming, the grapes fall into the vat, from above, by gravity. This avoids using traditional pumping systems, which would bring unwanted herbaceous notes. In the 2009 vintage, alcoholic fermentation and maceration were carried out for 22 days, carefully managing temperature and punching-down. Pump-overs were carried out daily, using a pair of elevating tanks into which the wine, tapped from the bottom of the vat, is transferred by gravity. Finally, the wine is poured by gravity into the vat, at high flow rate, to submerge the 'cap'. Nothing could be more natural and effective for gently extracting the colour and tannins. |
| Aging | On racking, the still warm wines are racked into small oak barrels, 60% new, made from selected woods, and matured for at least 3 years. After malolactic fermentation, in the middle of winter, the different batches are racked and blended. Thus the 'Maurizio Zanella' wine is born, which continues its ageing in wood for about 17 months. Afterwards, the different batches are assembled and the wine is bottled by gravity naturally. Thanks to innovative filling systems, the wine is not subjected to oxidative shocks, whisking and further additions of sulphites. Therefore, its integrity and wholesomeness are guaranteed. |
