Where it comes from
The grapes are grown in Veneto, in the Prosecco Treviso denomination area, in a region stretching between the hills of Valdobbiadene and the Venetian Prealps. The vineyards are situated on slopes that favour optimal ripening of the fruit, benefiting from a significant temperature range between day and night, essential for enhancing the aromatic profile. The climate is mild and breezy, with mild winters and temperate summers. The presence of clay soils of alluvial origin, rich in minerals, combined with excellent natural drainage, defines a fragrant style with great olfactory precision.
How it is produced
Harvesting begins in mid-September, with the bunches quickly brought to the winery to preserve their freshness. After destemming and gentle pressing, the must is separated from the skins and clarified by static decantation. The first fermentation takes place in stainless steel tanks, while the second fermentation occurs in a pressurised tank at a controlled temperature for about forty days. The wine completes its process with ageing on the lees for a period ranging from one to three months, before finishing with cold stabilisation and filtration.
