Valdobbiadene Prosecco Superiore Rive di Col San Martino Extra Brut by Bortolomiol is a sparkling wine made from Glera grapes. It displays a straw yellow colour with greenish highlights and a fine, effervescent perlage. On the nose, the fruity bouquet weaves together green apple and unripe pear with lively citrus notes of lemon, citron and lime. On the palate, mineral nuances of flint and hints of Mediterranean spices stand out, while the sip reveals a silky body and a distinctly dry finish. It is ideal paired with spring vegetable risottos, white meats and delicate oven-baked fish dishes.

Where it comes from

Produced in Veneto, this sparkling wine originates in the heart of the Valdobbiadene Prosecco Superiore denomination. The grapes come from a single vineyard located in the renowned subzone of Rive di Col San Martino, surrounded by woods and characterised by perfect sun exposure. The steep slopes require entirely manual work, a symbol of true heroic viticulture. This dedication allows a savoury and taut character to be transferred to the glass, precisely expressing the territorial identity of the vineyard.

How it is produced

Vinification begins with gentle pressing of the grapes. The primary fermentation takes place at a controlled temperature using selected yeasts, followed by the prise de mousse according to the Charmat Method, which lasts for about a month. To ensure a more enveloping structure, the wine rests for three months on the lees. Finally, a period of at least three months' bottle ageing helps to perfect its aromatic precision and define its characteristic dry finish.
