Description

The 505 mt. project stems from the idea of wanting to produce a cuvée that is a blend of vineyards located in the highest area of the winery, precisely at 505 m above sea level, around the municipality of Cupramontana.Here the land is particularly suited to the production of high quality white wines, where the landscape overlooking the sea meets the highest peaks of Monte San Vicino.The label has been designed and conceived precisely to communicate the idea of wanting to produce a wine that is a pure expression and identity of the territory in which it is produced, denoted by the presence of the mountains of the Umbria-Marches Apennines, which enhance the organoleptic properties of one of the greatest Italian vines: Verdicchio.The Boccafosca winery is located in the centre of the Marche region, immersed in the gentle slopes that characterise the Castelli di Jesi territory, and extends to the shores of the Adriatic Sea.

Boccafosca embarked on its journey in 2006 with the recovery of an ancient structure that was the seat of one of the many cooperatives that dotted the Marche region; from that moment on, it began an exciting challenge of evolution and change in which, step by step, new members and all those who decided to embrace viticulture with passion were welcomed.

Over time, we have focused more and more on conscious agriculture, on winemaking processes that preserve the qualities of the raw material, embracing new technologies and preserving the secrets of rural tradition...

We all come from an ancient agricultural background, a peasant culture made up of lands handed down from father to son, where the vineyard and the wine produced in the 'underground' cellars of each farmhouse could not be missing. Today we are two families who run this business. We are divided between those who take care of the vineyard and those who take care of the production up to the marketing, a daily work on the front line, a roundabout of people and passion, who when they speak of wine, speak of love for the land, speak of daily life, speak of memories...

Boccafosca is located in the centre of the Marche region, the vineyards extend from the gentle hills of the Castelli di Jesi to the Adriatic Sea, with altitudes reaching 450 metres above sea level at Cupramontana. The latter has been the protagonist of an important work of vineyard zoning and study of the pedoclimatic characteristics of each slope.

Wine making The grapes are separated from the stalks and then gently pressed with selection of the free-run juice. During processing, the product is preserved as much as possible from oxidative phenomena by working in reduction. Alcoholic fermentation takes place in steel barrels at a temperature of 15 6 °C and continues for approximately 15 8 days.
Aging In steel. Following this, the wine stays on the fine lees for 5 months and then matures in the bottle for at least 2-3 months.
