What kind of wine it is

Colore is a still red wine that represents a profound expression of Tuscany, crafted by Bibi Graetz. The result of an intriguing blend of Sangiovese, Canaiolo Nero and Colorino, it reveals a layered aromatic profile and a marked ability to evolve over time. The opening is austere, with hints of rose and pomegranate, then shifts to notes of blackberry and blueberry jam. The bouquet is enriched with cocoa, coffee, orange, eucalyptus and sandalwood, finishing with notes of medicinal herbs, liquorice and Mediterranean scrub. On the palate it is refined and elegant, supported by lively freshness and noble tannins, capable of delivering an embracing and very persistent finish.

Where it comes from

The grapes come from various selected areas of Tuscany, including Lamole, Vincigliata, Olmo, Siena and Bagno a Ripoli. The vineyards are located in elevated and cool sites, characterised by old vines of considerable age. The poor, sandy and stony soils, enriched with a matrix of galestro and clay, create the ideal agronomic environment for these varieties. Such pedoclimatic conditions define a clear and taut taste expression, giving the wine a precise tannic texture. The synergy between altitude and lean soils naturally steers the style towards great finesse and a measured balance between fruit and savoury tension.

How it is produced

The manual harvest involves several passes to pick the bunches at perfect ripeness, followed by careful selection. The parcels are vinified separately with spontaneous fermentation in open vats thanks to the action of indigenous yeasts, complemented by daily punch-downs. After maceration, malolactic fermentation takes place in old French oak barrels. The process continues with slow maturation in barrels of French oak for the individual lots. Only after the period of rest in the cellar is there a rigorous selection and subsequent blending of the most promising barrels for the final creation.

In two decades since his first vintage release, Bibi Graetz has become one of the brightest lights in Tuscan winemaking. This is primarily thanks to the superb quality of his pure-Sangiovese Testamatta and Colore. Bibi Graetz draws on old vines, which give his best reds depth and soul.

Red grapes are cultivated on the hillsides above Florence and sourced from prime sites in the Chianti Classico region, such as Montefili and Lamole. His whites from the island of Giglio are also an inspiration, proving that Tuscany can make great white wine, as well as red.
