San Giusto a Rentennano (name of Etruscan origin), is set high on the river Arbia in the southernmost part of Chianti Classico. Ancient Cistercian monastery (hence formerly called San Giusto alle Monache), then indomitable fortress, was marked on the border, according to a treaty of 1204, between the counties of Siena and Florence. Guelph battlements of the castle remain of the wall, the massive walls and Barbican underground cellars, still used for aging wine in barrels. Property of the Martini family of Cigala since 1914, today the brothers Anna, Lucia, Elisabetta, Francesca, Alessandro, Luca.

| Harvest | Grapes harvested by hand when perfectly ripe and dried naturally for around 120 days in a well-ventilated room. |
| Wine making | After pressing, the must is decanted into oak and chestnut barrels of varying capacities from 40 to 180 litres, sealed and placed under the roof, in an environment subject to seasonal temperature variations. Here it ferments and slowly rises for 6 years, with 40% of the initial content evaporating, with a final vinsanto yield of 10 2 % of the initial weight of the grapes. |
| Aging | Before bottling, a drop-by-drop filtration in Dutch cloth colas is carried out. It is a wine suitable for very long ageing, to be enjoyed at cellar temperature (10ºC). This wine contains no added sulphur. Matured 18 months in bottle in our cellars. |
