Barbaresco Crichet Pajé by Roagna represents the pinnacle of the winery, a red wine historically kept as a family reserve for special occasions. This pure Nebbiolo offers a clear and profound aromatic profile, marked by notes of violet, rose, black cherry and wild strawberry, enriched with balsamic nuances and fine spices. On the palate, it displays masterful balance, supported by a noble tannin and a velvety persistence. Its complexity, which expresses itself best after adequate aeration, makes it the ideal companion for game dishes, lamb and mature cheeses.

Where it comes from

This excellence is born in the heart of Barbaresco, specifically within the Pajé vineyard. The term Crichet refers to the highest part of the hill, a privileged position that enjoys ideal exposure for the perfect ripening of the grapes. The old vines, which are over fifty years old and come from meticulous massal selection, have developed deep roots capable of exploring different layers of soil. This connection with the land ensures a faithful and complex interpretation of the territory. Production follows very low yields, resulting in an extremely limited edition of exceptional concentration.

How it is produced

The process is aimed at enhancing the longevity and identity of the individual vineyard. The process involves fermentation in wood, followed by a long resting period of about five years divided between barrels and concrete tanks. In particular, the wine matures for fifty months in wood, a fundamental stage in defining its complex structure. This patient and lengthy ageing allows the youthful edges to be smoothed, bringing the wine to a definitive finesse and a harmony capable of defying time. Every stage is designed to respect the soul of the grape variety, preserving its original elegance.
