Description
The Rosso Faye wine is one of the flagship wines of the Pojer & Sandri winery. Located on the alluvial fan of Faedo—a small village in the Dolomites in the province of Trento, more precisely in the Paradisot area—the crops in this area grow in a soil composed of volcanic rock and deposits of sandstone, limestone, siltstone, marl, and dolomite. The vineyards enjoy a sunny climate thanks to their south-southwest exposure, cooled by good ventilation from the Ora del Garda breeze. The Rosso Faye is produced with 50% Cabernet Sauvignon grapes and the remaining 50% Cabernet, Franc, Merlot, and Lagrein. The Trentino-based company pays particular attention to the entire production process and strives to respect the land, seasonality, and tradition. From pruning and tying the vines, extreme dedication is applied, seeking to injure them as little as possible and thus strengthen the wood's resistance to disease and time, allowing the vines to self-regulate their production. The company does not use herbicides, desiccants, or botrytis agents, but only treats downy mildew and powdery mildew, only minimally, as the ventilation provided by the Ora del Garda wind favors the health of the plants. The harvest takes a relatively long time due to the varying altitudes of the Faedo hill. The grapes are harvested exclusively by hand, and the must is then fermented for a couple of weeks in wooden vats. Being a Riserva wine, after fermentation it is moved to age in oak barrels for a year and refine in the bottle for a further year before being ready for sale.

Faedo 1998: We are already starting to show our thirst for innovation: we are among the first at a national level to market Chardonnay, which until then was practically unknown.
Faedo 2002: We patent the reduction and press vinification with nitrogen recovery, which drastically reduces the use of sulphites. We then begin to wash the grapes through the grape jacuzzi.
The arrival of Marianna, Matteo, Fiamma, Elisa and Federico has brought further life and energy to this dream in which passion and innovation are the keystone.
