| Wine making | The grapes are harvested in stages according to the ripeness of each individual vineyard parcel. On arrival at the winery, the grapes are carefully vinified individually for each different lot; this is followed by pumping over and punching down to regulate the perfect extraction of the polyphenolic components. |
| Aging | Once fermentation is complete, the wines undergo malolactic fermentation in new and second passage barriques for a period of about 18 months after which, after blending the different lots after careful tasting, the wine is bottled. |
