This wine originates in Monforte d’Alba, within the renowned Barbera d’Alba area. The vineyards are situated at 370 metres above sea level, with a southern exposure that ensures ideal ripening of the grapes. The soil, composed of marl sandstone, imparts structure and a vibrant acidic streak. Parusso’s production philosophy follows the principles of biodynamic viticulture, aiming to enhance the deep connection between the grape variety and its native terroir.
How it is produced
Production begins with a careful manual harvest to preserve the integrity of the fruit. After gentle pressing, the must remains in prolonged contact with the skins to extract colour and phenolic compounds. Spontaneous fermentation is carried out exclusively by indigenous yeasts. This is followed by a maturation period of at least four months in small oak barrels on its own lees, a fundamental step to give the wine elegance and a complex aromatic structure.
