How it is produced
The harvest, carried out by hand, takes place at the beginning of October. After destemming, the must undergoes a maceration of 15-20 days, essential for the balanced extraction of colour and tannins. Once the desired harmony is achieved, the wine matures through ageing in French oak barrels for a period of 30-36 months, followed by a further rest of 6-12 months. To enhance its complexity, it is recommended to let it breathe for about an hour and to serve it at a temperature of 18-20 °C. Thanks to its vigorous character, it pairs perfectly with red meats and game, roasts and mature cheeses.
