The dry, pleasantly bitter finish is supported by a creamy and persistent mousse.
Where it comes from
This wine originates in Sorbara, the prime area for cultivating Lambrusco di Sorbara in Emilia-Romagna. The vines grow in the historic Il Cristo vineyard, characterised by loose, silty soils. This earthy composition is essential for giving the grapes a slender profile and maintaining the high acidic imprint typical of the variety. Paltrinieri has been working these lands since 1926, constantly enhancing the purest expression of the Modena region.
How it is produced
Production begins with the free-run must vinified as a white, obtained through gentle pressing of the grapes. Alcoholic fermentation occurs spontaneously thanks to the action of indigenous yeasts. This is followed by a natural refermentation in the bottle lasting about ninety days. As it is offered without any dosage and without disgorgement or filtration, the wine retains a hazy appearance and preserves its original tactile consistency.
