Description
Nebbiolo is a very eclectic vine and the origin of the grapes from different hills enhances its varietal characteristics. Calcareous-clayey soils accentuate the abundance of trace elements that enrich the structure, while soils rich in quartz sand and silt intensify the aromatic profile. The presence of grapes from the Michet clone, characterized by small and sparse bunches, enriches the wine with color and extracts. The result is a wine of great harmony with a broad bouquet.

| Harvest | The grapes, harvested exclusively by hand, are taken to the cellar and quickly destemmed and then delicately pressed. |
| Wine making | Fermentation with maceration takes place at a controlled temperature and frequent pumping over allows the must to be enriched with all the polyphenolic compounds of the peel. At the end of fermentation and at an optimal extraction level, racking is carried out. |
| Aging | Decanted into vitrified concrete vats, it maintains the post-fermentation temperature of around 22°C for a long time. In this way the malolactic fermentation starts and ends spontaneously in a short time. The refinement, carried out 60% in large 60 hl Slavonian oak barrels and the remaining 40% in steel, is aimed at maintaining the typical traits of freshness and florality of the Michet clone. |
