Soil composition Soils rich in clay and limestone.
Wine making The grapes are harvested separately, first the Granache and then the Syrah. The harvest macerates for 10 days in a controlled manner and at a cool temperature so that the tannins and fresh fruit aromas invade the juices without compromising the balance. Once ready, the grapes are pressed very gently and once alcoholic fermentation is complete, the liquids are racked several times and finally left to rest on the fine lees. Throughout the process, the varieties remain separate.
