Description
Champagne Le Mesnil Blanc de Blanc Grand Cru Brut is a perfect example of how Chardonnay can be the flagship grape variety for quality wines. The vineyards dedicated to producing grapes find ideal conditions for vigor in these particularly structured soils. The chalky nature of the soils, with their mixed composition and good drainage, allows the vines to have all the nutrients they need. Mesnil-sur-Orger is a small village just a few kilometers from Épernay, the heart of the Côte des Blancs. The area is so named because of the presence of exclusive Chardonnay vineyards. This white-fleshed grape gives wines strength, structure, and a great personality. The Blancs de Blancs designation indicates that this champagne, with the AOC Champagne Grand Cru Blanc de Blancs Brut designation, is made from only white grapes. The hand-picked grapes allow the bunches to remain intact until they arrive at the cellar. Here, the soft pressing, at a strictly controlled temperature, allows for the characteristic aromas and scents of the Chardonnay grape to be preserved. Fermentation, also at a controlled temperature, continues until malolactic fermentation is complete. The wine is then left to rest on the lees for approximately 4 years. The indigenous yeasts used are the result of careful selection. At the end of this long and meticulous process, the disgorging takes place and the subsequent dosing of sugars is carried out to obtain the Brut designation.
