Harvest | Barbera grapes are harvested between mid and end of September, whereas the Nebbiolo from early to mid October. |
Wine making | Separate fermentation for each grape variety for 7-8 days in temperature-controlled rotofermenters). Malolactic fermentation occurs in French oak. |
Aging | 16 8 months in new, medium toast French oak barrels. The two wines are blended and transferred to stainless steel vats for 2 months before bottling followed by ageing in the bottle for 15 months. The wine does not undergo filtration and clarification. |
