Wine making The grapes are pressed and vinified with a quick maceration of about 2 hours, resulting in the rosé base wine (rosé saigne). The base wine is then blended in the cellar in Beaune, a sugar syrup and natural yeasts are added. Everything is placed in stainless steel tanks and left sur lie for 2 months (short Charmat process). Cooling, sugar level adjustment (final total dosage 13g/l), centrifugation and isobaric filtration.
