Harvesting takes place in mid-September, when the grapes reach their perfect balance. The subsequent fermentation in stainless steel tanks is a technical choice designed to preserve the delicate varietal profile of the grape intact. Served at a temperature of 12°C, it pairs elegantly with hot starters and dishes based on oily fish, and also proves to be an ideal companion for strong-flavoured cheeses.
