Description

Guinot Blanquette de Limoux Brut Cuvée Reservée is a French sparkling white wine made with the Brut classic method from the Limoux region, in the Languedoc-Roussillon region. Born in the Abbey of Saint Hilaire, it is said that many in ancient times attempted several times to discover the secret behind this tasty, pale yellow wine with its mellow bubbles. The mystery of the link between the fermentation of Guinot Blanquette de Limoux and the March moon is unknown, but remains legendary. It has a fresh, citrusy flavor, with hints of apple and spring flowers. Made from 100% Mauzac grapes, a white grape, it presents fresh notes that normally pair well with fine fish or shellfish. Sparkling wine is made from the maturation of Limoux wine, a process already known since 1531. After aging in barrels, it is left to ferment for nine months with the bottles placed horizontally on the lees, promoting the production of its characteristic foam. After refermentation, the so-called dégorgement takes place: the elimination of the residue by freezing the neck of the bottle. With the low temperature, the loss of pressure will cause the liquid to decrease in volume, causing a small amount of it to escape, thus eliminating the residual sparkling wine without losing significant quantities. The recipe concludes with the preparation of the "liqueur d'expedition," the recipe of which is still a secret, used to determine the Brut dosage. The opalescent trait of the Guinot Blanquette de Limoux Brut Cuvée Reservée sparkling wine is given by a slow maturation and the double fermentation process, which ends with the production of bottles with an excellent quality-price ratio, valuable and highly appreciated in the European wine scene.

Guinot grows and makes wine in the vineyards and wineries in Limoux from 1875, date of foundation of the winery by E. Andrieu and Gedeon Guinot. After the gold medal at the Universal Exposition in Paris in 1889 Guinot is knowed for its high quality. Today, four generations later, its tradition and its quality can be found in his Cuvée. After aging on the lees, which lasts from two to five years,and the manual remuage, the degorgement is done to the volée and not a la glace.
