Description

What kind of wine it is

Dorigati Trento Methius Brut Riserva is a sparkling wine made using the Traditional Method, with an alpine character and a refined blend of Chardonnay and Pinot Noir. In the glass, it displays a straw yellow colour enlivened by golden highlights, enriched by an extremely persistent, fine-grained perlage. The aromatic bouquet is intense and complex, slightly spicy and marked by clear notes of ripe fruit. On the palate, it offers an enveloping and gentle mousse, revealing a soft taste, full of vitality and excellent balance, culminating in a long-lasting finish.

Where it comes from

The grapes for this wine come from the hillsides of Faedo and Pressano, grown at an ideal altitude between 350 and 500 metres. The Dorigati winery, active since 1858, manages its vineyards following the strict and classic Trentino pergola system. To ensure impeccable raw material, vineyard work includes short pruning combined with strict cluster thinning, limiting production in favour of total concentration of aromas and fruit structure.

How it is produced

The cuvée takes shape in spring through a vinification process in which part of the Chardonnay ferments in barrels to gain greater depth. The slow prise de mousse takes place at 11°C, followed by five years of ageing on the lees, enhanced by periodic remuage. After meticulous riddling on pupitres, disgorgement is carried out with the addition of liqueur d’expédition. A further 6-8 months of maturation gives the sparkling wine its final harmony, which expresses its best qualities when served between 6 and 8°C.

This elegant Trento DOC Riserva is created from a blend of Chardonnay (60%) and Pinot Noir (40%), with a portion of the former fermented in barrique to provide greater structure. The fine cuvée rests for a full five years on the lees, followed by a slow post-disgorgement maturation that gives the palate fullness and balance. It is recommended to serve at 6-8°C to enhance its fine-grained perlage.
