How it is produced

Production involves hand-picking at the start of the ripening period to ensure maximum accumulation of polyphenols. Immediately after harvesting, the olives are sent for milling via continuous cycle cold extraction. Subsequent malaxation in a controlled atmosphere is fundamental for preserving organoleptic integrity, keeping the freshness and overall definition of the flavour intact.
