Description
The Prosecco Valdobbiadene Dry is one of the excellent products of the Col Vetoraz winery, located on the hill of the same name next to the Mont di Cartizze, founded in 1993 with a precise idea "to honor this generous and unique territory in the world by creating only wines of the highest quality". Winemakers and owners of the land since 1838, the Miotto family have made the Valdobbiadene D.O.C.G.. The soul, history, and unique production of the company to best enhance the "terroir" and family tradition, and has contributed to its evolution leading to its inclusion in the list of UNESCO World Heritage Sites in 2019.
The Col Vetoraz Prosecco Valdobbiadene Dry is made exclusively from glera grapes, harvested in the second half of September at the time of maximum ripeness of the bunches to obtain the best aromatic expression of the fruit. It is initially fermented at a controlled temperature and receives static decantation, subsequently it is vinified using the Charmat method in an autoclave for the traditional secondary fermentation, as per the production regulations, which lasts 30/40 days. It is then aged for approximately 2 months to obtain an elegant, intense and fruity wine, with floral notes suitable for any time of day.
From the 2017 harvest, Col Vetoraz has decided to remove the word Prosecco from all labels and all communications, using only the denomination "Valdobbiadene docg", as this is the only true territorial identity, as the term overgeneralizes the territory of origin.

The Miotto Family settled on this hill in 1838 and started growing Prosecco and Cartizze grapes.
In 1993 Francesco Miotto, a direct descendant of Miotto family, together with Paolo De Bortoli and Loris dall'Acqua established the current Col Vetoraz.
