Castello di Ama Extra Virgin Olive Oil, produced in Tuscany, is made from a selection of Correggiolo, Moraiolo, Leccino and Frantoio varieties. It presents a brilliant green colour, destined to evolve over time towards golden highlights. Its fresh and fruity profile expresses clear vegetal notes of green leaf and chlorophyll. On the palate, it is fragrant and round, characterised by a pleasant spicy note accompanied by the typical bitter aftertaste of freshly pressed oil.
Where it comes from
This extra virgin oil is born in Gaiole in Chianti, in the heart of the province of Siena, immersed in the Tuscan landscape. The processing, carried out entirely within the Castello di Ama estate, ensures a direct link between the olive groves and the estate's own oil mill.
How it is produced
The production cycle begins with a rigorous manual harvest of the olives, followed by mechanical pressing carried out on the same day. To ensure a superior level of quality, Castello di Ama maintains a deliberately low yield for every single tree. Finally, the oil rests in stainless steel tanks at a controlled temperature, protected from light and air, so as to prevent oxidation and preserve its aromatic characteristics intact.

To date, Castello di Ama owns and manages about 75 hectares of vineyards and 40 hectares of olive groves, relying on the work of more than 60 people. The role of general manager and oenologist is held continuously by Marco Pallanti, who served, between 2006 and 2012, as President of the Chianti Classico Consortium, bringing the contribution of the creation of the 'Gran Selezione' category with the aim of highlighting the extraordinary quality and diversity of the region's wines.
