Ca’ di Rajo Prosecco Extra Dry is an elegant sparkling wine made from Glera grapes, produced by Ca’ di Rajo in the Prosecco Treviso area. Crafted using the long Charmat method, it displays a bright straw-yellow colour with greenish highlights and a fine perlage. The bouquet weaves together acacia flowers with notes of apple, pear and lemon. On the palate, the Extra Dry version reveals a creamy softness and a well-balanced sweetness. The taste is harmonious, with a savoury and mineral structure that ensures a clean finish.
Where it comes from
The grapes grow in Rai di San Polo di Piave, in a Veneto area nestled between the slopes of the Dolomites and the Venetian coast. The vineyards are rooted in clay and sandy soils with gravelly veins, which give the wine fragrance and savouriness. Viticulture follows the Bellussera method, an ancient late nineteenth-century system with great ecological value. This unique arrangement raises the vines, ensuring perfect sun exposure, even ripening of the bunches and environmental protection.
How it is produced
Harvesting is done by hand in mid-September. A very gentle pressing extracts the must for fermentation, while the sparkling process in autoclave uses extended times, avoiding malolactic fermentation to preserve natural freshness. The wine undergoes a final maturation before distribution, resulting in extremely fine bubbles. This care enhances a lively flavour profile, making it an ideal companion for oysters, cheeses and fried fish.
