It displays a straw yellow colour with greenish highlights and a very fine and persistent perlage. The aromatic profile is elegant, characterised by notes of green apple, pear and pineapple, accompanied by hints of lime, acacia and elderflower. On the palate, it expresses freshness and balanced savouriness, making it an excellent aperitif to accompany fried and raw seafood dishes.
Where it comes from
This Venetian sparkling wine originates from the Treviso area, a region with a strong winemaking tradition. The wine takes its name from the village near Trieste, historically recognised as the cradle of the Glera variety. The Ca’ di Rajo estate protects the vineyard landscape by preserving the ancient Bellussera training system. This complex nineteenth-century technique, based exclusively on manual work, represents an agricultural heritage to be safeguarded. By working carefully among the rows, the winery produces a glass that precisely embodies the character of its land of origin.
How it is produced
The secondary fermentation takes place using the Charmat Method in a pressurised tank, clearly enhancing the primary aromas of the grapes. The process is designed to ensure a Brut style, maintaining lively acidity and a pleasant smoothness. This method enriches the olfactory profile: in addition to the fruit and floral notes, there are delicate nuances of hazelnut and bread crust that lend a measured structural complexity. The sip is harmonious and dry. To preserve its sensory integrity over time, it is recommended to store the wine in cool environments, away from light and sources of heat.
