The Ca’ del Bosco Franciacorta Cuvée Prestige Rosé is a refined wine with the Denominazione di Origine Controllata e Garantita status from Lombardy, obtained from a masterly blend of Pinot Noir and Chardonnay. Produced according to the rigorous criteria of the Traditional Method, it reveals a dry and vibrant style, highlighted by an Extra Brut dosage. The pink colour results from a short maceration of the Pinot Noir. Ageing on the lees continues for twenty-four months in underground cellars. At the time of disgorgement, a patented oxygen-free system is employed, designed to avoid oxidative shock and preserve the wine's organoleptic integrity.
Where it comes from
The grapes destined for this Franciacorta grow in the municipalities of Erbusco, Adro, Iseo, Passirano and Cazzago San Martino. The Pinot Noir is cultivated in vineyards with an average age of over thirty years, while the Chardonnay comes from plots that are almost thirty years old.
How it is produced
Vinification begins with hand-harvesting, followed by cooling and an exclusive washing and hydromassage system for the bunches. The Pinot Noir, destemmed and transferred to the press by gravity, undergoes a short maceration to extract its pink hue. The must ferments at a controlled temperature in steel tanks and small barrels. The Chardonnay is vinified separately with traditional pressing of the whole bunches. After seven months of maturation, the selections come together in the final blend. The second fermentation and the time spent on the lees take place in underground environments, culminating in a minimal dosage that respects the wine's freshness.

| Wine making | Cuvée Prestige Rosé is created from the separate vinification of Pinot Noir and Chardonnay. The grapes, harvested by hand in small crates, are selected and chilled, then subjected to an exclusive washing and hydro-massage of the bunches ("grape spa") using soaking tanks and drying tunnels. The Pinot Noir is destemmed and transferred to the press by gravity, with a short "rosé" maceration of 24–36 hours; the must, separated from the skins, ferments in small barrels and stainless steel tanks at a controlled temperature, with the best fractions vinified separately. The Chardonnay is vinified with traditional whole-bunch pressing and separate fermentation of the best fractions. After approximately 7 months of ageing, the base wines are blended to create the cuvée; this is followed by secondary fermentation in the bottle and ageing on the lees in underground cellars at 12°C for around 24 months. Disgorgement takes place in the absence of oxygen using the patented Ca’ del Bosco system, with a very low Extra Brut dosage (0.5 g/L). |
