Bollinger Special Cuvée is the quintessential elegant and complex Champagne. Its golden yellow colour heralds a fine and persistent perlage with velvety bubbles. On the nose, it offers clear notes of ripe fruit, enriched by hints of brioche, fresh nuts and subtle spices. On the palate, it is structured and lively, blending a pleasant freshness and a savoury finish with sweet hints of pear. This wine is born from a harmonious blend that enhances Pinot Noir, Chardonnay and Pinot Meunier. Excellent served at 8–10 °C, it pairs perfectly with raw seafood, grilled lobster and sushi, and also masterfully complements white meats and mature cheeses.

Where it comes from

This Brut is produced in France, in the heart of the Champagne region. The grapes used for the blend come largely from renowned Grands and Premiers Crus, a factor that gives great precision and profound aromatic richness. The Bollinger winery is a historic benchmark for local viticulture. The identity of the label is closely linked to the name Special Cuvée, suggested in 1911 to highlight the house’s established expertise. The careful use of a selection of reserve wines ensures a consistent and recognisable style over time, authentically reflecting the strong connection with its place of origin.

How it is produced

Production relies entirely on the Traditional Method, which involves a second fermentation in the bottle accompanied by meticulous manual riddling. The first fermentation takes place in stainless steel tanks and fine oak barrels, a technique that gives the wine remarkable structural depth. The blend is enriched with reserve wines aged for a long time in large magnums. Subsequently, the Champagne rests on the lees for at least thirty-six months, a period that far exceeds the minimum required by regulations. The measured Brut dosage harmonises the natural liveliness of the sip, releasing elegant evolved notes of bread crust, toasted almond and yeast for a satisfying finish.
