How it is produced
After careful selection in the vineyard, part of the base wine ferments and undergoes malolactic fermentation in wooden barrels, a choice that gives the blend roundness and softness. The subsequent refermentation in the bottle strictly follows the rules of the Metodo Classico. The wine rests for a long time on the lees, developing aromatic complexity without losing its vital energy. The total absence of dosage in the liqueur d’expédition results in a true pas dosé, capable of expressing the pure essence of the grapes and the harmony of the technical process.
