How it is produced

The grapes are hand-harvested in September, with careful selection of the bunches. After gentle pressing and static decantation, the must undergoes its first fermentation at a controlled temperature. The secondary fermentation follows the Charmat Method in a pressurised tank, with a brief period on the lees that enriches the structure without weighing down the palate. This process creates a well-balanced sparkling wine, perfect for convivial moments. Served well chilled, it is the ideal pairing for seafood dishes, shellfish, fresh cheeses or pizza.
