Description
What kind of wine it is
Aprimondo Nero d’Avola, made from slightly dried grapes, is a still red wine produced according to the principles of organic farming and sustainability. Visually, it displays an intense ruby red colour enriched with violet highlights. The bouquet reveals notes of wild berries, accompanied by pleasant balsamic hints. On the palate, it is intensely fruity, characterised by a pronounced aromatic progression and a remarkable persistence that ensures its structural balance.
Where it comes from
This wine originates in Sicily, within the renowned regional denomination. The Nero d’Avola vines grow at an altitude between 200 and 300 metres, rooted in clay-limestone soils. The spur-pruned cordon training system allows for optimal canopy management, which is essential for fruit quality. The harvest, carried out in late September, ensures grapes with a rich and concentrated profile, providing the ideal basis for a solid structure and a well-defined flavour expression.
How it is produced
Production begins in the vineyard, where the bunches are left to slightly dry on the vine to naturally concentrate sugars and aromas. Vinification continues with fermentation in contact with the skins and a temperature-controlled maceration to achieve a balanced extraction. The process concludes with maturation in stainless steel, a choice aimed at preserving the integrity of the fruit and the freshness of the balsamic notes, maximising the varietal purity of Nero d’Avola.
History and Curiosities
A product of the 2021 harvest from the DOC Sicilia, Aprimondo Nero d’Avola by Gruppo Caviro expresses a warm and authentic identity. Its strength lies in the gentle withering on the vine, a technique that naturally concentrates its aromas before maturation in steel, thus preserving the purest essence of the grape variety. This captivating red, the result of vineyards cultivated with a strict organic and sustainable approach on clay-limestone soils, offers an intense and long-lived sip, capable of evolving and delighting over time.
