What kind of wine it is
Antoine Bouvet's Extra Brut Champagne is a taut blend of Chardonnay and Pinot Noir. Crafted using the Traditional Method, it displays a golden colour with a fine perlage. The bouquet reveals hints of dried fruit and hazelnut, evolving into notes of coffee and spices. On the palate, it is dry, rich and balanced, with a finish of excellent persistence. Its bold character pairs perfectly with shellfish, lean fish and mature cheeses.
Where it comes from
It originates in Mareuil-sur-Ay, in the Montagne de Reims, a prime area for Champagne. Antoine Bouvet practises biodynamic and sustainable viticulture on vines over forty years old. The chalk-rich limestone soils give the wine a linear profile and marked precision. This agronomic sensitivity allows for concentrated grapes, which impart a pronounced aromatic and territorial complexity to the glass.
How it is produced
Production follows a handcrafted, minimal intervention philosophy. The must undergoes spontaneous fermentation with indigenous yeasts, preserving the varietal character. Before the secondary fermentation required by the Traditional Method, the base wine rests for twenty-four months of ageing in barrels to stabilise its structure. The choice of zero dosage, in the Extra Brut style, enhances its purity and ensures excellent ageing potential.

Born in Mareuil-sur-Ay from the legacy of Guy Bouvet, this 2018 Vintage encapsulates the essence of the Montagne de Reims. The grapes, sourced from over forty-year-old vines cultivated biodynamically on chalky soils, result in a rare production of around six hundred bottles. The artisanal approach involves spontaneous fermentations with indigenous yeasts and twenty-four months of maturation in tank. Thanks to this minimal intervention, a magnificent Extra Brut with zero dosage is created, able to combine the mineral elegance of the terroir with a pure and profoundly sustainable sip.

Antoine has clear ideas, despite his young age, and thanks to the grandfather Guy's peasant wisdom, processes his champagnes with great naturalness and thickness. The numbers are very limited, no more than 600 bottles per cuvee.
The heritage of vineyards and limited but of great quality. On average old plants that are managed with great sensitivity applying biodynamic methods. Same philosophy that applies in the cellar, spontaneous fermentation and the least possible intervention. Certainly one of those names that are establishing themselves among the "very young".
