Description
What kind of wine it is
Antoine Bouvet Champagne Bisseuil Extra Brut is a refined Traditional Method sparkling wine that embodies the essence of the renowned French region. In the glass, this Champagne displays a straw yellow colour, enlivened by a fine and persistent perlage. The bouquet combines clear fruity aromas with fragrant notes of yeast. On the palate, it stands out for its fresh, precise and mineral character, enhanced by the Extra Brut dosage. It is the ideal wine to accompany white fish dishes, delicate starters and cheeses, offering perfect balance when served between 6 and 8°C.
Where it comes from
The roots of this wine lie in the commune of Bisseuil, in the heart of the Montagne de Reims. The Chardonnay and Pinot Noir grapes come from old vines over forty years old, located in south-facing plots such as Les Rocheforts and Les Pautes. The identity of the cuvée is shaped by the chalky soil, which gives the sip a pronounced verticality and unmistakable savouriness. Antoine Bouvet cultivates the vineyards according to the principles of biodynamic agriculture, ensuring respectful viticulture and an authentic expression of the terroir.
How it is produced
The production of this blend follows a philosophy of minimal intervention. The musts ferment spontaneously thanks to the action of indigenous yeasts alone, preserving the purity of the fruit. The subsequent prise de mousse takes place in the bottle according to the traditional method, a fundamental process for defining the elegance and structure of the bubbles. The minimal sugar dosage at the end preserves the dry and essential profile of the wine, offering a dynamic, fresh and highly precise drinking experience.

Antoine has clear ideas, despite his young age, and thanks to the grandfather Guy's peasant wisdom, processes his champagnes with great naturalness and thickness. The numbers are very limited, no more than 600 bottles per cuvee.
The heritage of vineyards and limited but of great quality. On average old plants that are managed with great sensitivity applying biodynamic methods. Same philosophy that applies in the cellar, spontaneous fermentation and the least possible intervention. Certainly one of those names that are establishing themselves among the "very young".
