Terroir al Limit is a project born in 2001 from the initiative of three people passionate and strongly motivated to enhance the precious heritage of wine and the particular area of the Priory: Eben Sadie, a renowned South African winemaker, Dominik Huber, a German student of economics, and Jaume Sabaté, a Spanish investor. From the very beginning, the idea of the three was to seek the maximum possible expression of the grape variety, hence the choice of the name of the winery.
The management of the vineyards is entirely biodynamic: the land is worked only with mules and horses, without the use of machinery. From these natural methods, Huber - who today deals directly and mainly with the vineyards and the cellar - elaborates wines with very different characteristics from the traditional ones of the Priory area: Huber's red wines play on finesse and balance rather than on extracts or on power, thus approaching the style of Burgundian Pinot Noir.
