Description

What kind of wine it is

The Graacher Himmelreich Riesling Kabinett is an elegant still white wine, produced by Willi Schaefer in Mosel. Made from Riesling grapes, it stands out for its light texture and gentle sweetness, perfectly balanced by lively acidity. Fermentation in acacia barrels with natural yeasts preserves the purity of the fruit, offering a bouquet rich in notes of lime, pear, peach and ripe apple, intertwined with delicate white flowers. The palate finishes with a persistent minerality, making it ideal both for solitary tasting and paired with flavourful dishes.

Where it comes from

This Riesling originates from the prestigious Graacher Himmelreich vineyard, located in the renowned Mosel-Saar-Ruwer area. The old vines, over forty years old, are cultivated following a strict organic and sustainable approach. The roots delve into soils rich in Devonian slate, a fundamental matrix for the wine's vibrant mineral signature. The historic Willi Schaefer winery works these plots with great skill, enhancing the pure territorial identity in full compliance with the strict standards of the VDP association.

How it is produced

After the early October harvest, the winemaking process involves spontaneous fermentation with indigenous yeasts. The wine then matures in acacia barrels, maintaining absolute freshness and a fine aromatic continuity. The palate expresses rich citrus and white fruit notes, supported by a light texture that combines a gentle residual sweetness with elegant acidity. This clear flavour definition pairs beautifully with Asian cuisine, spicy dishes, pork and cheeses.

History and Curiosities

Founded in 1590 and now run by Willi and Christoph Schaefer, this historic German winery cultivates exclusively Riesling on soils rich in Devonian slate. A prominent member of the VDP, the estate values historic vines over forty years old located in the renowned Graacher Himmelreich vineyard.
