The Graacher Domprobst Riesling Kabinett by Willi Schaefer is a semi-aromatic white wine made from Riesling grapes. Originating from the Mosel, it stands out for its refined style that harmoniously balances a soft fruity sweetness with lively acidity. The aromatic bouquet opens with notes of peach, pear and grapefruit, enriched by elegant hints of mango, acacia flowers and a pronounced mineral streak. Where it comes from

The grapes come from the renowned Graacher Domprobst vineyard, located in the heart of the Mosel, Germany. Here, the rows of old vines sink their roots into complex Devonian slate soils. How it is produced

After harvesting, the must ferments thanks to the action of indigenous yeasts inside acacia barrels. The maturation continues in the same barrels for about eight months, a choice that allows the integrity and elegance of the Riesling to be preserved. This approach shapes a sip with a slightly creamy texture and precise contours. The acidity, mature and well integrated, guides the tasting towards a long and clean finish, punctuated by delicate citrus notes.

The estate is located in the commune of Bernkasel-Graach in the Mosel wine-growing region in Germany. It is owned by Willi e Christoph Schaefer. The vineyard area totals three hectares, with holdings in the top-rated Graacher Domprobst and Himmelreich sites, as well as in the Wehlener Sonnenuhr site. The area is planted exclusively with Riesling. Most of the wines are fermented with natural yeasts in traditional 1000-litre oak barrels, and then matured in these same barrels.
