Description
An undisputed symbol of Piedmontese food and wine, Moscato D'Asti G.D. Vajra is produced in the ancient vineyards of Cuneo that extend from the municipalities of Mango to Santo Stefano Belbo. Made exclusively from premium quality Moscato Bianco grapes, a grape variety dating back to the times of the Greeks and Romans, this wine is a sweet, fortified, and aromatic passito. The large, juicy, and flourishing bunches of grapes thrive in a rich soil dominated by calcareous tuff and marl. The area's climate is less gentle, alternating between snowy, hailstorm-filled winters and mild springs and summers, yet it does not hinder the cultivation of lush grapes, always characterized by the typical aroma of white musk. Sweet white wine DOCG is produced by the G. D. Vajira winery which, for this Moscato d'Asti as well, follows sustainable and low environmental impact cultivation methods, forgoes irrigation, encourages spontaneous grassing and varies thinning depending on the specific vintage. A young white wine that is drunk after a not excessively long preparation, it is harvested in September and served, fresh and light, on the tables set during the Christmas season. To produce Moscato d'Asti G.D. Vajra wine, the first step is a careful but not excessively forceful pressing. Immediately after, a short cold decantation is carried out and the subsequent fermentation phase is carried out. This too is short: in a week the wine is ready to be bottled and brought to market.
