Aromatic still white wine from Trentino-Alto Adige, 12.5% ABV, Traminer Aromatico. Produced by Cantina Tramin, a historic winery founded in 1898. 0.75 L bottle, 2017 vintage. A Spätlese Gewürztraminer that enchants with its aromatic complexity and history. Epokale ages in the dark for six years in the Ridanna Monteneve mine, at over 2,000 meters above sea level. A kaleidoscope of aromas of rose petals, spicy white flowers, exotic notes of ripe yellow fruit, and aromatic spices. Deep straw yellow with golden highlights. Full-bodied, deep, spicy, and juicy, with an extremely persistent finish.

| Story | Epokale is inspired by the wine of a bygone era. When Gewürztraminer, even in South Tyrol, was produced with a clearly perceptible residual sugar, which gave strength to body and soul. To reintroduce it today, we have selected two of our oldest Gewürztraminer vineyards near the Nussbaumer farm. To develop its maximum expression, Epokale then matures in the dark for six years in the Ridanna Monteneve mine, at an altitude of over 2,000 metres. Here, four kilometres from the mouth of the tunnel, it preserves its freshness and gains in elegance thanks to an environment that maintains constant humidity and a temperature of 11 degrees all year round. |

| Harvest | Late October. Grapes harvested by hand, with attention paid to each individual grape, placed in small containers that keep them intact. |
| Wine making | After destemming and crushing, the grapes are left to macerate briefly in the must at a low temperature, followed by soft pressing. Slow fermentation at a controlled temperature of 18°C for over four weeks, followed by chilling at 5°C for 10 days. It is then racked into another small steel container where it remains in contact with the yeasts for a further eight months with the must racking by natural sedimentation. |
| Aging | In small steel containers, in continuous contact with the yeasts for eight months. After bottling, the wine was taken to the Monteneve mine in Val Ridanna at an altitude of over 2000 metres. Here it was stored for about six years in the dark, four kilometres from the mouth of the tunnel and 450 metres below the mountain. The temperature of 11° and the humidity of 90 per cent are constant throughout the year, the air pressure equal to that outside. |
