Description

Still white wine from Sicily, 13% ABV, produced by Orestiadi. Blend: 90% Catarratto Bianco Comune and 10% Chardonnay. 0.75L bottle, 2021 vintage. A wine born in the heart of the Belice Valley, in Gibellina, where Mediterranean scents and colors intertwine with myth and art. After a cryomaceration at 4°C for 4 hours, the wine is softly pressed, followed by fermentation using spontaneous yeasts for 20 days at a controlled temperature. This is followed by 6 months of aging on the lees with twice-weekly batonnage. For the next 6 months, half of the wine ages in French oak tonneaux and half in stainless steel. Once combined, the two spend another 6 months in stainless steel sur lies and at least 4 months in bottle. Bright yellow with greenish reflections. On the nose, white-fleshed fruits such as plum, apple, and pineapple, with hints of flint. Roundness and complexity complement the minerality, a combination that gives the wine an enveloping character without ever losing its freshness.
